Mitiko fusion restaurant

Successfully merging two gastronomic cultures can become a real puzzle. Mission accomplished for Mitiko. The restaurant, located in the heart of Madrid and under the direction of chef Jorge Rodríguez, has become a Nikkei reference.

It fuses Peruvian tradition with Japanese techniques, resulting in a proposal with a unique staging. The menu includes emblematic dishes such as ceviche, tiraditos and a variety of sushias well as a selection of Peruvian pisco-based cocktails perfect to complement the dishes.

You can’t leave without having tried their zamburiña, with tiger’s milk, miso butter, aguaje spheres, spicy chalaquita, sacha cilantro oil and crispy quinoa and sprouts. Another of their most interesting dishes is the Causa Nikkei, a salmon tartar with mashed potato, yellow chili, lime, creamy avocado, rocoto mayo, kimchi and flowers, shaped like spaghetti. Fresh and spicy at the same time, it is a real explosion of flavors.

Its classic ceviche also stands out, where you can appreciate the impeccable treatment of the fish mixed with the citrus flavors so characteristic of this dish. On the other hand, their two-texture ceviche plays with ingredients, the crispy squid adds a fun touch to the dish.

Spicy lovers will find their paradise in Mítiko cevichewhich includes sea bass, tiger prawn, squid, rocoto tiger milk and garling chili, zarandaja, sweet potato puree, miso, corn and sprouts.

The Toro Balfegó, composed of hamachi, flambé, mustard sauce, sesame, chili charapita and lime, is another great aromatic bet, like the Picaña, which includes ripened picaña, tomato emulsion and crispy quinoa. The combination of textures is a great plus point.

Among the main dishes, the lomo saltado is especially recommended, with wok-fried sirloin, yellow chili, red onion, Buddha’s ear, pakchoy, cherry, cilantro, soy and oyster sauce, fried yuca and rice with corn, which demonstrates masterful work in cooking meat. Its sweet touch awakens the taste buds.

It is advisable to finish the menu with a dessert that honors chocolate in an unprecedented way. It is composed of 70% chocolate mouse, chocolate namelaka, charapita chili, chocolate ice cream, cocoa crunch and Peruvian cocoa nips.

This proposal echoes the experience and mastery, but also sensitivity, of Jorge Rodríguez. The chef honors to their cultural and family origins. Coming from Cajamarca, Peru, he always wanted to experiment with cooking. It more than fulfills this with Mitiko where every detail is taken care of, including the tableware.

The latter, inspired by nature, It is handmade by different ceramic workshops. It simulates the land and seabed of Peru with coral shapes and turquoise glazes where ceviches and fish are served. The decoration of the restaurant, halfway between the Asian and South American countries, also reflects this perfect balance. All this accompanied by unbeatable service. To savor.
